Colombia Bourbon Aji — Finca Las Palmas (Anaerobic Washed)
This is one of those coffees that doesn’t need convincing—one cup and it’s obvious. First previewed through Coffee Quest, this then-unnamed lot immediately stood out for its ripe, zippy purple-fruit character: winey berries, jammy intensity, and laser-focused acidity. The profile can read a little differently from cup to cup—some brews lean more classic washed, others sip like a super clean natural—but the through-line is the same: explosively fruity.
About the farm
This Finca Las Palmas is not the same Las Palmas featured by Prodigal a few years back. This one is a small, two-hectare farm in Huila, Colombia, operated by Abelardo Alvear, with careful selective harvesting focused on ripe cherry selection.
Processing details
Ripe cherries undergo a two-stage anaerobic fermentation designed to amplify fruit while keeping the cup clean:
- Anaerobic fermentation ~40 hours (whole cherry)
- Depulping, followed by a second anaerobic fermentation ~80 hours
- Washed, then patio dried for ~3 weeks
